On the Forza Motorsport website, there is a new post that lists all the cars. And on the Xbox YouTube page, there is a new video that is the Forza Motorsport 5: Launch Trailer.
On the website, it says
"200 cars included on disk with a regular cadence of car packs slated for the future."
