On RockStar Games site, they have made an update that gives more details about the digital content that is in the Special and Collector's Edition of Grand Theft Auto V.
Special Edition
Stunt Plane Trials - This let's you take on additional aerial challenges spread throughout the map
Special Ability Boost - Michael, Franklin and Trevor each have a unique special ability, and with this it's bar will generate 25% faster.
Bonus Outfits, Tattoos and More - Michael, Franklin and Trevor will receive 1 outfit each, one additional article of clothing (shirt, hoodie and jacket) and a tattoo.
Additional Weapons - You will get the .50 Caliber Pistol, Bullpup Shotgun and the melee weapon the Hammer.
Collector's Edition
As well as everything that is it the Special Edition, you also get.
Custom Characters for Grand Theft Auto Online - You get Niko Bellic (Grand Theft Auto IV), along with Claude and Misty (Both From Grand Theft Auto III) These players can be used as "parent options" in the online mode's character creation system.
Unique Vehicles and Garage Property - exclusive garage to store custom vehicles, that also comes with CarbonRS, Hotknife and the Khamelion
